Personally I don't think carne asada needs any cheese at all, the guacamole and sour cream would be plenty.
If you're gonna add queso you might as well use cheap ground beef seasoned with generic gringo taco seasoning. Queso on top of guacamole would, imo, just drown out the flavor of good carne asada
