What's the healthiest bread? What even is the difference between a healthy and an unhealthy bread? Is healthy worth any taste difference from white bread?
>>
>>21588526
whole grain bread will leave you "full" for longer and has more fibre than standard wheat bread

Rye is naturally darker than wheat. Whole grain is darker than white flour. They sometimes also add fermented malt for the color and flavor.

You never read into English.
But feel free to explain yourself, while I post this yeast-leavened dark rye.
>>
>>21588580
The manufactured sourdough loaf corporation fears the every-man's local bakery white loaf.
>>
Sourdough of any grain > commercial yeast version of same grain

more phytic acid, less mineral bioavailability
faster starch digestibility = higher GI
less protein digestibility
no sweetener FAAs or amino acid derivatives produced
no benefits for gut microbiota
more FODMAPs
less phenolic acids and bioactive compounds
inferior antioxidant efficiency

It has to be true sourdough though, some slop brands sell fake sourdough with flavorings and yeast.
>>
>>21588663
Is there any good sourdough that doesn't have texture of a brick?
>>
>>21588646
At least in don't make rye bread without sourdough.
>>
>>21588670
Yea, bake your own or get it fresh.
Baking at lower temps will make the crust soft, which I prefer; higher temps makes a thicker crispy crust that makes a mess when slicing.

carrots have high gi but low gl, since there total amount of sugar is low. pretty obvious.
>>
>>21588590
its not about whats better, its what spikes your blood sugar the most.
french fries can have more salt and sneed oil than mashed potatoes but it wont spike your blood sugar the same way.
>>
>>21588526
Eat red meat you retard
>>
Entirely dependent on flour quality and it varies wildely between each brand. Even organic flour can be shit. Some might be high in arsenic and other heavy metals from the soil.
>>
>>21588844
>pretty obvious.
no, it is not pretty obvious. anyone saying you should choose pasta over carrots if you're concerned about blood sugar is unreliable. it doesn't matter what rating you're using, carrots should never be ranked so much higher than pasta. i've never seen any other chart list carrots as high glycemic and pasta as low glycemic.
>>
>>21590892
cooked carrots are very high GI. raw carrots are not.
>>
>>21590896
>cooked carrots are very high GI
no, they aren't. this is the first time i've ever seen carrots listed as high glycemic in the same category as white bread lmao. pretty much any other glycemic index will put them medium or low and definitely below white rice and white bread.

Rye whole grain
It has lots of fiber, vitamin B and A and it much more filling than white bread
It also lasts longer and tastes better
>>21588553
This is really retarded because the authors don't seem to understand what the different varieties of bread are. In general rye whole grain has a low glycemic index, white whole grain has a higher then rye white bread and wheat white bread etc
>>21588730
Buckwheat in general is unironically really good for protein (contains all the amino acids) and has a decent glycemic index about the same as whole rye for WHOLE GRAIN buckwheat.
But buckwheat bread tastes bad, just eat groats which are wonderful if you bake them correctly
>>
>>21588526
bread is neither "healthy" nor "unhealthy" bread has nutrition. how much bread you eat is healthy or not.
>>
>>21592098
I mean that just recenters the question to which bread is the most nutritious.
