Duck fat

Ghee is made from butter (which can be made from sheep, goats, buffalo, yaks, and even camels milk)

Tallow is made from rendering the fat of cows (though it can also be made from sheep, goats, buffalo, yaks, and camels milk; just like butter)

Lard is made from rendering pig fat (wild boar also)

Schmaltz is made from rendering chicken/goose fat.


You can render down and create similar for basically any animal, but most don't get special names like the ones above.

Horse fat, duck fat, etc.

In my own personal usage, i've found duck fat to be the best.

butter tastes the best, the most versatile. smoking point and burning is overblown. i fry pretty thick medium-rare steaks with very good browning without it burning. i can also fry rare steak before the butter starts burning if i pay attention. a big plus is if the pan is crowded.

It's a neutral oil with a high smoke point, that's all i care about. The fact it's ALSO more popular lately just means I can buy it at my regular grocery store for cheap with several options to choose from.

I use cast iron when I want a hard sear because i'm not retarded.

Stainless steel doesn't have the thermal mass to give a good proper sear, but keep pretending you're better because you're too stupid to know better.

You can use Ghee or clarified butter to sear with, but regular butter you simply can't get a good sear on a steak because the milk solids WILL burn.


Or you just don't actually like a hard sear.
