Ghee is made from butter (which can be made from sheep, goats, buffalo, yaks, and even camels milk)Tallow is made from rendering the fat of cows (though it can also be made from sheep, goats, buffalo, yaks, and camels milk; just like butter)Lard is made from rendering pig fat (wild boar also)Schmaltz is made from rendering chicken/goose fat. You can render down and create similar for basically any animal, but most don't get special names like the ones above.Horse fat, duck fat, etc. In my own personal usage, i've found duck fat to be the best.
