It all depends on moderation and what you’re cooking with, especially in the case of olive oil and butter quality and quantity is key. If a recipe called for wonderbread slices and I gave you a massive loaf of ancestral grain sourdough would it come out as intended, or would it be so far off from the desired result the health virtues don’t really matter because the truth is just eat that thing less.
