My local oriental shop is holding za'atar. What would be the best use for some za'atar?

>>21589728I don't know why an oriental shop would sell it, I think of it more as a middle eastern thing. It's tasty though, adds a nice bit of sour and some salt and herbs. Sumac, thenain ingredient is very tasty so its good on all sorts of stuff. But what's so much better than zatar is sumac tea. Sumac grows wild in many places, so just harvest the flowers when they are ripe and bright and preferably when there has been little rain. Soak them in cold water for a day or so and then strain it. Add a bit of sugar and you have a delicious pink lemonade type drink. You can boil down to concentrate it if you like, it makes for easy storage.
Its a pretty good way to season freekah or quinoa Just toast it slightly with the grains and cook as per usual with whatever liquid medium you choose
