If you're doing something inside, shallow frying is doable for flatter things like chicken or eggplant parm, and deep frying for small things like shrimp or corndogs or falafel/any croquettes is okay too. Chicken in general is just such a fucking pain in my rear end to cook. Every minuscule piece of this godforsaken creature cooks in a completely different way, and the window between raw and dry is microscopic. Beef and pork are both satisfying and forgiving to cook in a variety of different, but chicken is just a nightmare.
