imo, unless you can deep fry outside (balcony, backyard, or garage), deep frying big foods like fried chicken it ain't worth doing because of the smell.

If you're doing something inside, shallow frying is doable for flatter things like chicken or eggplant parm, and deep frying for small things like shrimp or corndogs or falafel/any croquettes is okay too. Imo

Chicken in general is just such a fucking pain in my rear end to cook. Every minuscule piece of this godforsaken creature cooks in a completely different way, and the window between raw and dry is microscopic. Beef and pork are both satisfying and forgiving to cook in a variety of different, but chicken is just a nightmare.
