Of the commonly cultivated gourmet mushrooms, excluding shiitake, are kings the only ones of any culinary value? Lions mane often taste like shit, blue oysters suck, chestnuts are whatever, etc etc.

I appreciate the proactive apology to lighten the anticipated sting of your candid reply. How did you have them? I find them quite tasty when prepared as scallops. Slicing them lengthwise, they are a bit more rubbery.

That said - there's no need to apologize. I am here because I think most of them, frankly, suck.

Aside from golden oysters and hen of the woods (maitake as the weebs say), those are not commonly cultivated. And I find golden oysters pretty tasteless, maitake is decent when fried to a crisp, but I find doing so incredibly cost ineffective for something that's ~$10+/lb.

It’s just how they are, sometimes they’re bitter/astringent especially if picked early. I’ve grown tons and tons across several different strains, pic related. I do like them as crab cakes, however. And when they do taste good, they’re good. Nice little mops for steak juice. But they can be hit or miss.

Prompted by this discussion I actually searched it they get bitter if they sit too long after harvest, and I mostly ate what didn't sell, so maybe I was just always eating the old bitter ones.

Yeah, I used to work with some people who would send pallets of matsutake to Japan weekly. They tend to like all the mushrooms that end with 'take' (shiitake, maitake, matsutake....).

I'm not huge on most oysters personally, in general I just find the prices for gourmet mushrooms outrageously high. $14/lb for an oyster that's 90% water is just kinda nuts especially when a portobello or shiitake is tastier.
