True. People love to talk of "artichoke dip" which masks the flavor of the artichoke. I have never heard a single person ever recommend an artichoke recipe that doesn't mask the flavor if artichoke heavily.

Other recipes:
If using whole artichoke, long, purple ones are best relatively whole, just the tops cut off and the choke scooped out. It's then stuffed with garlic, cheese and its own stem and roasted after a drizzling of olive oil and sprinkling of salt.
While not strictly an artichoke, cardoon is a relative and it tastes the same. I make cardoon pie when it's in season and have made the same pie with the frozen artichokes I mentioned already.
I use artichoke in paella, as it's meant to have.
Of course, there's Jewish artichokes, which are just floured and fried artichokes. Who doesn't live fried shit?
But as for artichoke dip, I know what you mean. I had it for the first time a few years ago and was saddened that it tasted nothing like artichoke, I love artichoke so much.
I even love cynar and my wife thinks it's gross. That's an artichoke liqueur.

I fuckin' love artichokes. Snip the thorns and stem off, Boil 'em with a little lemon juice until soft, dip the leaves in a butter-garlic-hot-sauce mix and scrape the meat off the bottom of the 'em until you get down to that delicious heart. Scrape that, cut it and dip it too.
