It's corn with onion powder and fat. These things are made by pressing them through a tiny nozzle, not frying. High pressure means super-heated water that will basically explode on the other side, leaving a dry crunchy piece of cooked food matter. Food extruders were originally invented not to dry food but just to efficiently sterilize and cook it (for livestock feed).
