This is literally every single one of them, and yet there's somehow ten thousand billion different brands and varieties. I don't get it.

The peppers themselves have different flavors regardless of capsaicin content. That's one of the weird things about the hottest peppers like the habanero and ghost pepper is that they come from a family of peppers that's really fruity flavored, which doesn't really pair well with their heat level or the foods you'd usually apply them to. The vinegar, garlic and salt are there are preservatives, but they also tone the fruitiness way down so they can be enjoyed on a wider arrange of dishes.

I miss hot sauce, bros. I hit 30 and my stomach said "no mas." I've been thinking about making a big batch of ""hot"" sauce with some red bell pepper lately just so I can enjoy the flavor and acidity again on otherwise boring dishes like eggs, oven-coooked chicken and greens.
