If you don't cut into the chicken, look and see it's raw, then put it back in the oven to cook, you're normal, if you do, you're a failure.
If you don't have a dedicated air fryer with a temp setting, it can be useful to get fry temps correct. If you're making sugar products or tempering chocolate then it can be very useful. Most of the time you should be building the skill of telling temp and doneness based on the cooking process and knowing your tools.
