Baking soda is useless without including something acidic right? At work we have banana bread that uses baking soda but without anything really acidic wouldnt it just be pointless? Not only that, but that same recipe also uses baking powder, why would you need to use baking soda AND powder for one recipe?

It decomposes into sodium carbonate, water and carbon dioxide when the temp goes above 175° so you don't need an acid get an effect. It's why you can use it as a fire extinguisher.
Idk about the powder and soda combo that's always seemed a bit fishy to me

Technically yes but you are most likely going to use it in something that's already acidic
