Love me some poutine, although I've never been to Canada. I'm in NYC and there's a place a few blocks from me called Pommes Frites that does a halfway decent version.

I know there's better elsewhere in the city but this is closest and it's still pretty good.

Even in Canada it's not really a cultural thing outside of the dairy producing regions in the east. Fresh curds don't travel very far since they're kept unrefrigerated to preserve texture.

I live in Québec (in the town it was invented in), and I eat once every other week. Just a small size, it's fucking rich and I'm not a big eater. Italian poutine, with meat spaghetti sauce instead of the brown sauce, is really good too. The best poutines are usually sold in small diners and snack bars, not in fine cuisine or american fast food restaurants. Lots of commercial cheese curd producers also have their own snack bars, they're usually pretty good too. The best one was in a snack bar in a convenience store, Poutine Heriot. I dunno what they put in their sauce, but it was great. It closed shortly after I graduated and the building was demolished. It's now a retirement home. The google street view has not been updated in a while though.

The problem is that Quebec's cheese curds are only ok. They have the texture, but not the taste. The ideal poutine would be made with Quebecois fries (for reason >>21600425 stated) and Wisconsin curds. Also, Quebec should be nuked.

i don't have any pics of my homemade poutine because it's just one of those foods i'd rather grab when i'm out drinking. When I make it, it's just russets that i blanche and double-fry, squeaky cheese curds, and beef gravy (or Bethelet poutine gravy powder when I can't be fucked to make my own).

And that's exactly what a lot of chain restaurants and international spots miss. It's supposed to be easy, cozy, working class comfort food slung out a white rusty chip truck off the main road, served by a friendly, weathered, lady who's been there forever.
i'll post a pic of my own some time but, for now, here's one i had a while back in Notre-Dame-du-Nord (QC).
It was so good; like a warm blanket for the stomach.
