I went to a Japanese restaurant, the ind where you sit on the floor... asked if they made hot and sour soup and the waitress said no but we can make it special for you. What I got looked awful. Nothing but sliced button mushrooms in a dark hot soup. It turned out to be the best damn hot and sour soup I would ever eat in my life. Nailed the flavor and didn't overdo the starch like a lot of Chinese restaurants do.
