it could be a fair question. carbonara traditionally only has dry aged cheese which lacks lactose in any significant quantity.

I've always made it with the cheese as well as a "sauce" that contained strained egg yolks and milk but idk. If an adult is asking for a silly substitution I'm more than happy to make what they want and assume they're aware it's not gonna be perfect

My only experience making it was working at a hipster pizza place so that makes sense. We used a squeeze bottle that was like 50/50 egg yolk and milk. It was definitely a low-tier version of the dish
