I got this fella on sale so let's cook a rabbit.

First and most important step is butchering it. We separate the front and back by cutting right where the ribs begin. I also cut out the kidney and liver.
The spine is easy to cut with a knife.

Next step is separating the thighs from the posterior. This one is a bit tricky to do.

Last part is cutting off the stomach flaps.

The posterior is where the real meat is so I'm marinating all of it in some vinegar and water.

After some hours simmering the soup is truly excellent. I'll freeze a few jars for sauces and the rest eat over the next couple days

Rabbits actually don't have enough fat anon, that's why there's a thing called Rabbit Starvation aka Protein Poisoning because you need the fat for the brain and the protein. Don't worry though OP will be fine because it's not like they're trying to subsist only on rabbit for like weeks or months.

I live in Poland.
The larger supermarkets here sometimes stock up on the fresh rabbits. I happen to live near an Auchan big enough to have em and small enough that they're not snatched up instantly when they go on sale.
