I got this fella on sale so let's cook a rabbit.
First and most important step is butchering it. We separate the front and back by cutting right where the ribs begin. I also cut out the kidney and liver. The spine is easy to cut with a knife.
Next step is separating the thighs from the posterior. This one is a bit tricky to do.
Last part is cutting off the stomach flaps.
>>21600060How are you going to eat that?
The posterior is where the real meat is so I'm marinating all of it in some vinegar and water.
Cover with onions
Vinegar+water with some juniper berries and allspice, now to the fridge for a day or so.>>21600074I plan on roasting the posterior and making soup out of the anterior.
Cut off the front legs and let the anterior with the liver soak a bit to remove the blood.
>>21600051>I got this fella on sale so let's cook a rabbit.Spain?
>>21600083I thought rabbit was lean. There's a lot of fat on there.
the only rabbit around me is frozen, anybody know how well it thaws?
>>21600157This one used to post on the /ck/ fast food threads a lot
>>21600157Well sure, but that's just on the surface, the meat goes all the way through. Rabbits are about 6% body fat
>>21600159Similar to a chicken or duck. >>21600157Depends on what they eat/you feed them. My father hates rabbit as he had to eat some rabbit as a child that was fattened so much he had to throw up.
>>21600153Poland>>21600157It's mostly liver fat. The meat itself is fairly lean
Okay its sufficiently soaked
Mirepoix
unamused
Put some of the usual spices in, and time to let it simmer.>>21600304My sister had a rabbit pet when I was 10. He used to bite me frequently.
>>21600161Underrated
>>21600051Thanks for documenting the process. Looks like it’s going to make for good eating.
I won't accept rabbits are just a long chicken
>>21600281>>21600306>Not searing or sauting for that extra flavor goodness. Anon I'm disappointed. But carry on.
After some hours simmering the soup is truly excellent. I'll freeze a few jars for sauces and the rest eat over the next couple days>>21600555It's a light soup/bouillon not a braise or stew so I did not sear the meat
I should call her
>>21600157Rabbits actually don't have enough fat anon, that's why there's a thing called Rabbit Starvation aka Protein Poisoning because you need the fat for the brain and the protein. Don't worry though OP will be fine because it's not like they're trying to subsist only on rabbit for like weeks or months.
>>21600619 early winter rabbits are fat and greasy as hell. protein protein poisoning can basically only occur during a very narrow window of time when the animals are all emaciated right before spring.
He finna cook welsh rabbit
>>21600629Huh neat, i didn't quite know that. So if they're fat and greasy enough then the fat to protein nutrient intake is usually not a problem then?
>>21600051it's over...they got bugs....
nice thread OP. in what state or country would you get a rabbit "on sale"? i've only seen them frozen at 1 chineee store.
>>21600881I live in Poland. The larger supermarkets here sometimes stock up on the fresh rabbits. I happen to live near an Auchan big enough to have em and small enough that they're not snatched up instantly when they go on sale.
>>21600881In the US call around some Italian stores or even restaurants can hook you upThey're usually frozen
>>21600899will try. never heard of italians having rabbit. most exotic thing i can get is frozen duck at aldi.
>>21600881Even in Germany it's on sale on the time.
