They won't. Real lettuce is too expensive and wastes too quickly. Shredded can be made for next to nothing and only goes on a few items so they can keep very little. If they add a whole ass salad menu they need to have much more on hand and if demand falls they get waste loss. Fries and burgers are ironically cheaper.
