Most people aren’t interested in the hyper min max attitude of obsessively hacking to find the uber ultimate xyz. That’s how you end up drinking coffee a monkey shit out, tea wrapped in an orange peel and fermented in a goats vagina, quadruple dry hopped ipas, etc.
At a certain point it becomes so esoteric and performative, and subject to financial and weird little subculture barriers to entry that it’s obviously not just about the food anymore but has become to varying degrees about their own ego and little clique.

It unironically allows for more creativity. If you want something novel because you don't feel like more traditional cuisine that's when you go to a gastronomy place. Things that work really well eventually spread out into more mainstream places, like >>21605201

Sometimes, other times not. In my experience, these sorts of places have at least 7 courses. If you're used to having like a bucket of KFC and a two liter bottle of mountain dew for a meal you'd probably be hungry after, but I can't say I've gone home hungry from one myself.

Americans can't understand this as a concept, they are more used to brand names and take aways, or just spaghetti and ketchup.

Molecular gastronomy is an exploration of what can be done to often some mundane foods, it's not about stuffing your face with whatever is put in front of you but actually taking your time to enjoy it.

Put it this way, If molecular gastronomy was japanese, there would be countless threads by americans about how good it is.

I also note, that most Americans can't afford eggs or basic groceries, so it is no surprise that they can't afford to eat at these places, hence the derision.

I went somewhere one time that had a molecular gastronomy focus and one of the courses was a "deconstructed hot dog", essentially they smeared ketchup and mustard on a plate and cut up a hot dog. It was stupid and pretentious. They had some freeze dried ice cream side that was good though.

That said I got laid that night which is the primary purpose of fine and novelty dining establishments.

i've worked in places that do molecular and fine dining shit and even though its not my choice for an expensive dinner, one really understated aspect of these places is how their techniques trickle down into regular restuarants and make food better as a whole. most places wont be serving waldorf salad lollipop anytime soon but heston vastly upped the quality of chips and stock production throughout uk restuarants for e.g

Time and place, man. Sometimes the experience of a nice multi-course french style dinner is a delightful couple of hours fun surprises! It's also nice to have reasonable portions that don't fill you up, so the wine flight can keep going and going and going...
