For some reason fancy baked goods illicit a deep horrible depressing feeling down in my soul and I can physically feel the sadness.
Anything more than basic baked goods like cookies, brownies or a pie makes me feel like shit. Not from eating them, from knowing they exist and people make them. I cannot explain. Probably some deep trauma I have locked in a dark recess of my mind..

a cheese cake is typically made without flour. You thicken it with eggs or gelatin
if its just celiac related theres gluten free cake mixes
theres meringue cakes where you make sheets of meringue layered with cream

or some mix of the above where the cake layers are formed of eggy/gelatiney/creamy stuff like custards, cream, meringue, gelatin, buttercream

1/2 cup water
3 envelopes gelatin powder


1 1/2 cups granulated sugar
1 1/4 cups corn syrup
1/2 cup water
Pinch of salt
2 teaspoons vanilla

1:1 mixture corn starch/powdered sugar

Mix 1/2 cup water and 3 envelopes of gelatin in stand mixer bowl. Let sit

Add sugar,corn syrup,water and salt to pot and mix until dissolved

Cook on medium-high heat to a light boil. Boil until temperature reaches 240 f. Remove from hear immediately

Using whisk attatchment gently whisk gelatin before slowly adding sugar mixture. Let it stream down side of bowl

Whisk at high speed. Add vanilla while mixing.

Whisk high speed for 5 minutes or until it slides off slow and thick from attatchment

Pour mixture into pan coated in corn starch/powdered sugar.

Leave alone 12 hours

Before cutting add light coating of powder mix.

Recommend greasing a knife or pizza wheel to cut

Dip in chocolate or other fancy choices

The lack of eggs concerns me, some recipes don't even have salt or vanilla, makes me think the mouth feel would be worse and they'd be cloying due to the excess of other ingredients. Have to bake one for a birthday coming up.
