Quiche Lorraine is fucking outstanding if you do it yourself. Any shop bought has very little flavour. It's the most piece of piss pastry to make: 1.75 times the flour to butter, 0.2 times egg yolk to butter. Same grams of bacon to mls of creme fraiche, same mls of double cream to creme fraiche. A quarter of the weight of gruyere compared to bacon. Approximately 1 egg per third of the mix. To put this equation into practical terms:
Pastry:
175g flour
100g butter
1 egg yolk
Filling:
200g bacon
200ml creme fraiche
200ml double cream
3 eggs
50g gruyere
Blind bake pastry for 15 minutes. Cook the bacon. Mix all of this, put in the pastry. Cook for 25 minutes

Uhm.. A quiche Lorraine has no cheese. My mother is French and a quiche Lorraine has AT BEST a layer of sour cream and, depending on the traditional and where exactly in France layers of puff pastry or shortcrust pastry. But mostly puff pastry above and beyond the sour cream. (creme fraiche) regarding the top layer.
Cheese is nothing you have on a Lorraine. I remember we had, on special occasions (birthday etc) , a quiche Lorraine with a baked in figure for us kids. So in one slice was a figure. Sadly, this quiche was not a self made one but back then, we kids, moved the one with the figurine.
