I fucking love tripas. I tried them as a meme but they ended up being my go-to taco filling the whole time I lived in Texas.
Unfortunately I never learned how to make them myself and now I live way too far from the border to find them anywhere.

Not many Mexican places in my country, but I've always loved Mexican food. Anyway, I ordered a beef chimichanga and it was fucking outstanding. I get what it is, but that deep frying just kicked it up notches. A few months later, I was in southern Spain and Portugal for quite a while. I went to a Mexican place, ordered the beef chimichanga again. I then confirmed that it's a fucking excellent dish.

Chilaquiles. Not the crazy kitchen sink ones; just salsa (I prefer verde, but it's whatever), chips, cheese, and if there HAS to be more maybe onions and/or crema. With just a little crunch left, not totally sogged out.

At any restaurant, I'll look for what they might be featuring, ie what they are good at making, or so clue to where the owners are from....

For breakfast, it's all about the red or green chilaquiles, esp with shredded chicken on top. A pastry and coffee or else molletes.

I'll try the tamales, which should be their lovingly prepared family favorite.

I'm a sucker for a delicious mole on chicken/turkey or on cheese enchiladas, as well as a chile relleno.

If I see huaraches or pupusas, especially with nopales on top, I get those.
