It's a somewhat niche thing, so only useful if you're the type of person who needs it. Should a commercial restaurant use it? Well if they're grinding their own spices, the odds are that their weekly volume would be more than what those jars are holding.

What about at home? I buy whole spices too that I often grind, but I'm not grinding a ton of them at once. I'll grind wtv I need if I choose to make something that needs it that week. How far am I planning into what I'm making? How long would it take for me to use up a jar of seasoning? The good thing about grinding whole spices is that the taste is way better and fresher than store bought, e.g. cumin is way more fruity that what you'd expect if all you've ever had was from pre-ground. If it's gonna take me months to get through the ground seasoning I've made whose volatile compounds decompose over that time into the same flavour as a store bought pack, there's way less benefit to me. Given the same weight, pre ground seasoning will be cheaper than whole, unfortunately.

But what if you're a home cook who goes through the jar pretty quickly? It's still gonna be better than store bought stuff. Like, think an Indian mom who uses the same couple masalas for everything. It may benefit them.

It sorta doesn't help that the glass exposes it to light, so it should kept inside a cupboard or pantry.
