Grew up in Germanic, Lutheran-ass Iowa, moved to Italian, Catholic-ass New England. Discovered these at old school delis.

Eggs with peppers, tomato sauce, and cheese. Kind of like a chicken/eggplant parm but with eggs and peppers instead. I guess this is for meatless Fridays? It's good, though.

Yeah, you can get this at some of the hot dog / Italian beef places, including as a separate topping. Kinda defeats the original "meatless" purpose of the dish, but I don't care about that anyway.
