i made jambalaya a few days ago and have a bunch of leftover celery and was thinking about making this exact thread.

Celery is pretty hardy in the fridge drawer and usually waits for your next recipe idea.
I like a celery salads (google recipes). I also use them and the green leaves w/onion, in chicken salad, potato salad, tuna salad, egg salad for crunch.

Sounds obvious, but celery soup. It's one of the best soups around. Celery, potatoes, stock, milk. I always bump into up with some onions, garlic and butter. I always use white pepper rather than black for this.

First if you want to keep it fresh:
rinse in water, remove leaves, cut in cram in a clean pickle jar with fresh water and 2 tbsp of salt, replace water every 1-2 days. Mine stays fresh like this for around 2 weeks.
I use it in rice tuna mayo salad, I use it in stir fries and curries. Also great in beef stews like pot-au-feu.

only as an adult did I learn how amazing celery greens are. they're more valuable to me than celery stalks to be honest. dice those greens up and saute them with your onions and your soup or stew is going to taste amazing.

the leftover stalks are okay, like anons have said you can adorn them with peanut butter or cream cheese or dip them in hummous or babaganoush or whatever, but don't forget the real magic is in the leaves

I do really find solace in peoples' love of celery, a vegetable that has long suffered from distaste and malignment, but also where the fuck are all the celeriac bros? this chunk of love should be way more popular than stringy horrible celery
