There's this Persian curry made of a fucktonne of celery. I think it uses at least two kinds, the vegetable sort like in your pic and the herb one. I noted a little of that herbal bitterness common to Asian celery in the one and only time I tried it.

First if you want to keep it fresh:rinse in water, remove leaves, cut in cram in a clean pickle jar with fresh water and 2 tbsp of salt, replace water every 1-2 days. Mine stays fresh like this for around 2 weeks.I use it in rice tuna mayo salad, I use it in stir fries and curries. Also great in beef stews like pot-au-feu.

chop up the stalk and combine with canned tuna or salmon and mayo, very easy and nutritious protein
As a kid the only time I ever ate it was with peanut butter. Nowadays all I ever use it for is tuna salad and mirepoix.It just does not go well in salads.
