These so-called salads called koshimbir. Most of them are similar to morkovcha (I'm central Asian so that's what I grew up with) and Korean muchim and namul salads. Tomato koshimbir is basically just unwatery Marathi salsa. Red cabbage koshimbir has this fantastic crunch I lose my shit for. She makes pear koshimbir with those round Korean pears as well as many, many other types of salads. So she'll make three of these salads then we just pop open a few tins of fish and eat it all with a stack of homemade roti.

The palak paneer a few of y'all are gushing over takes about fifteen minutes. Garlic/ginger in the pan. She also adds chili pickle because we love the taste but it's not traditional. Also onion. And ghee or oil. Salt. Cook a few. Add pureed spinach, cheese cubes and salt (she uses stock cube) and cook down then add spice oil. That's it. And while that's going, she'll have some other things going, too. She always starts with the roti dough if she's making it with something other than whole wheat flour because they need to be done with boiling water and that's too hot to work with by hand. I asked her and she said she doesn't know why boiling water works but could water doesn't just that it does. But either way, after making the curries, cooking the roti is the last step. She uses a two burner griddle so she can cook two at the same time and the only take a minute or so per pair.Honestly, other than the spicework and how she manages to roll roti dough in such a way that the balls rotate themselves as she just told back and forth, everything she makes is pretty simplistic and I can't imagine the rest of India being terribly different.>>21620139Not really a fan of any myself.
