Yup. Red onions are kind of an in-season and then very aged out-of-season kind of crapshoot. You never know specifically if the onions you buy, will be mild and sweet or extremely strong and sharp. Taste one, and adjust. The cold rinse helps, and actually makes them crisper, less floppy, and when I'm using them in a cole slaw, I'll actually further pickle them in the mayo-vinegar slurry as a 2nd soaking step. I'll give them a lime juice soak step in salsa making, and so forth.
