I remember my mom used to make casseroles when I was a kid. I have never made one in my adult life (other than lasagna, which seems like it fits the description)...are they worth making? I have a lot of tuna that I'll probably never eat and I also have a bunch of frozen chicken thighs and breasts that I could use.Do you make casseroles? Are they good for "cheap eating" options? What's your favorite casserole?
>>21621385I'll gonna stick my cock in your cASSerHOLE boy
>>21621385I make funeral potatoes pretty frequently. Basically a cheese and hashbrown casserole. I grew up mormon, and that's what we called it. It's just diced hashbrowns, cheddar, minced onion, sour cream, cream of chicken soup, a stick of butter, garlic powder, and it's topped with corn flakes before you put it in the oven. I add cubed ham to mine. You will find this dish at every luncheon following a mormon funeral. If your dead relative's funeral luncheon does NOT have funeral potatoes, the attendees will talk about it. I am no longer mormon, but I love this stuff. I made picrel.
They went out of style so you can't make them anymore, sorry.
I made what I think was a casserole the other day. I bought some ground turkey, bowtie pasta, a can of rotel, frozen bell peppers and a can of tomato paste. Browned the veggies and the meat, soft-boiled the pasta then threw it all together with some italian seasoning and Old Bay (my Tony's had a roach crawling inside of it. Bastard). I also added shredded mozzarella. It turned out really good, kind of like a lasagna if made by someone who was only ever described it by a moron.
>>21621418Fuck I butchered that last sentence. I am the moron
>>21621399another day another rape threat on my favorite cooking forum
>>21621420I'm not judging, just trying to understand. Did you mean it tasted like it was described to a moron, and then the moron made it?(funny story, I am the exmormon earlier in the thread, and my fingers always want to say mormon instead of moron. You shouldn't care, I think think it's funny)
This thread reminds you that Americans cannot cook
>>21621459it reminds me of momslop. mom just throws whatever ingredients are going bad soon together in a pan and wa la. occasionally delicious, and it could never be repeated. I think it requires chicken that has been in the fridge for at least a week.
>>21621385>Are they good for "cheap eating" options? They're generally somewhat cheap, ideally fast/easy to make, and made in bulk; if they aren't either of the first two, I'd question why you're even making the casserole in the first place. This isn't the greatest sentiment, since people will make stuff like fried rice, or some crazy ass cassoulet with 4 types of meat even though shit like this was meant to be an easy meal made from leftovers from the week. Still, for cheap easy casserole dishes, I associate with canned foods and other premade ingredients.Classic structure might be something like >Liquid medium sauce (mystery liquid, cream, tomato sauce, beschemel, roux+liquid, morney, veloute)>Solid filler (noodles, rice, veggies, meat)>Browned Topping (bread crumbs, fried something, crispy something, browned cheese, browned potatoes)Lasagna (noodles+meat, canned tomato sauce, cheese)Mac and Cheese (noodles, cheese sauce, bread crumbs)Green Bean Casserole (canned cream mushroom soup, frozen green beans, fried onions)Shepard's Pie (thick meat gravy w/ cornstarch, ground meat + veggies, mashed potatoes)
>>21621404this sounds crazy lol. do you fry the hash browns first?
>>21621385>>21621478For your case, the tuna will be too dry alone, and def needs good sauce. Buy some mayo/kewpie and oil if too dry, some condiment like sriracha/ketchup/relish, an acid like lemon/rice vinegar/apple cidar vinegar, season with salt/soy sauce/sugar/dashi powder/black pepper/cayenne/garlic, add some veggies/fruit like onion/celery/grapes/corn/peas. Wtv you want. All meat alone isn't the best solid filler, so maybe add something like green beans or noodles. Or, if you want something thematic, the asian route may be to layer the bottom with oil and some leftover cooked rice, throw your asian tuna+sauce over the rice, and top with seasoned panko and seaweed flakes in some form. Ideally the bottom rice will get brown and crispy, and now you have tuna onigiri casserole. Don't know if raw rice would work with the oil+water issue, but maybe. If you wanna go the western route, layer the bottom with oil/butter and bread, middle with western tuna salad, top with seasoned breadcrumbs, and now you got tuna salad sandwich casserole.
>>21621385I make tuna casserole a lot because I get a lot of canned goods for free. Pretty cheap either way and a casserole will last you some days.I do like 3-4 cans tuna2 cans cream of mushroom soup1-2 packages of egg noodles (depends how big they are) also you can literally use any kind of pasta really1 can of peas1 chopped onion2 stalks of celeryI just add black pepper and garlic, no need to salt. Mix in a little shredded cheeseTop with shredded cheese and italian breadcrumbs and paprika or crunchy fried onions, or use crushed up potato chips etc. Whatevs.
i guess im more of a stew guy but i like to make this with tomatao sauce, pasta, chicken and black beans with shredded cheese on top. always called it a pasta bake but i think it qualifies
>>21621479Nta, just buy the hash browns. Hardest part of that recipe should be cutting the onions and ham.
>>21621486so you just put frozen hash browns in and cook them in the soup? no need to cook them first?
>>21621488They diced it. It was already cooked in some way. Most likely they just microwaved that shit. Could just tear it with your hands into the mixture. Or, be fancy and fry em up (it undeniably would taste at least a little better)
>>21621488>>21621492Like, they used fucking cornflakes, this wasn't some Michelin tier effort going on here.
>>21621385My sister made I think Paula Deens Cornbread casserole for thanksgiving, and it was pretty darn amazing. It uses Jiffy cornbread mix with corn and a bunch of wet stuff to get it really moist
>>21621465>going bad soon>chicken that has been in the fridge for at least a weekif only I was so lucky. my momslop was comprised of things far beyond bad, chicken that had been in the fridge for at least a month
>>21621479Nope! You get a bag of frozen diced hash browns and let it thaw.
>>21621488Mix your wet ingredients + shredded cheese, pour them over the hashbrowns, onions, and optional ham in a 9x13 inch casserole dish. Mix a little. Pour a blanket of corn flakes over the top and bake it at 350 degrees for half an hour. Wa la.
This is a corn casserole that a former friend of mine used to make.
>>21621496I said I like it, I didn't say it was good lmaoI recommend eating it after you've been really sad.
>>21621651>former frienddid they vote for trump?
>>21621658No they got super religious and stopped wanting to hang out
>>21621385gotta love the green bean. anyone have new twists on this one? we used fresh green beans one year instead of canned and it was a nice change.
for me, it's tartiflette
>>21621658that would make them a proper friend since they care about humanity staying human.>>21621651looks very midwest.
>>21621404looks fucking delicious. It's crazy you have to kill someone everytime you make it though
>>21621385Casseroles are the ultimate 1 dish food. Calorie dense and varied ingredients. As an American, I love that shit. I love making a casserole and just slicing a piece here and there and heating up and you can eat it for a few days.
>>21621385Like a lasagna, the prep and clean up and the whole thing is done is nice.I find them extra work, but the crunch and browning on top and the edges is nice. Cheaper, never.
>>21621690>green bean. anyone have new twists>fresh green beansUsing frozen whole beans removes the step you'd do for blanching them first. The original recipe seems to be misquoted or lost anon...you have to deliberately remember that it used to have worchestershire/soy and sliced water chestnuts in it. Add them back. Also I supplement the mushrooms in the condensed soup mix with extra mushrooms and very thin shallot, lots of extra mushrooms. Use half n half in place of the milk.As far as herbs, I don't do it. I leave this one for my stuffing on the plate.
honestly? not really. if you want something like that you're better off just making a stew or whatever and putting it over your carb of choice, rice, potatoes, etc. much easier to get the texture right.
non-midwesterner here, but well into adulthood I became hotdishpilled and holy fuck this has now become my favourite and most beloved winter cook. and also my first casseröle
>>21621662nta, so they voted for trump, kek
I've used this casserole recipe for years and everyone has loved it. I add jalapenos sometimes, and you can mess with the spice blend or cheese. It's a 10/10 american classic casseroli.

>>21621653Nothing wrong with a mashed potato cousin with cheese and crunch. I’m sure it tastes great and I’d enjoy it, sans the death required to make it. Not fine dining constructed, but still good dining.
>>21621456All good, but yeah--like a lasagna if it was cooked by someone who never saw or tasted lasagna before, but had it described to them by a moron
Do casseroles have to be baked in a dish?Is it something else if you use all the same ingredients but just make it in a pot on the stove?
Wow so many great ideas in this thread. I can't wait to dump a bunch of random slop into a dish and bake it.
>>21622179Casserole and cassoulet come from some french word meaning the cooking vessel or pot, which would be baked in an oven. The latter might be more stew like or has more liquid, but it's not like people were being strict on this. But that's like saying like it's only barbecue if it's done outside on a grill or in a dirt hole, and can't be done in an oven or other cooking vessel. Language isn't close to rigorous, and food words certainly aren't. If people want to do a 'fancy' casserole, yeah, maybe they'll brown their meat very well in a dutch oven on the stove and saute their veggies, and then finish it in the oven to simmer and then brown the top. Or maybe they'll forgo the oven entirely, and let it simmer on the stove, then brown the top with a torch. Or maybe simmer on the stove, dump into a casserole dish, and brown the top with a torch. Basically the same end product, but varying the baking dish and the method of cooking. When is it a casserole or not? Honestly, who tf cares? If it looks like a duck and acts like a duck, it is a duck, which is something all humans do to describe stuff (it was only a few generations ago that a dolphin was still a fish, and even today there are languages that refer to them as fish or that blue = green, or in biology all vertebrates could be called fish, or tran...).

>>21621385>What's your favorite casserole?Favorite is relative. Baked, crusted dishes really just make me happy. Since I live in Florida, if I'm turning on my oven, it's going to be 2 for 1 usage, or else a dessert goes into the already heated oven when I pull out dinner, usually a pie, fruit crumble or brownies.Sometimes when I'm doing like slabs of rubbed ribs in foil for a long time at 250, in goes a baked beans covered in peppers and bacon. If a breaded kind of shake n bake pork chops, or a roaster with a chuck roast or pork loin, I'll add something else in there too. One of my favorites is butter sauteed yellow squash and vidalias, tossed in sour cream and cheddar cheese and topped by buttery crushed ritz. I also liked carrot or sweet potato souffles, covered in brown sugar-pecan-cornflake crumb crust. Dressing/stuffing can match my main and have some herbs or fruit or nuts to match my mood. It's a good way to empty out a bit of the onion and celery pantry, and some old bread heels or stale.
I like funeral potatoes
I like turkey tetrazzini

>>21621385They're a nice thing to have when you're too tired to cook and they always taste better reheated. I make Mexican casserole with chicken, rice, salsa, beans and cheese
>>21622477>But that's like saying like it's only barbecue if it's done outside on a grill or in a dirt hole, and can't be done in an oven or other cooking vessel. But that's correct, barbecue is done with a barbecue pit, that's why it's barbecue. If it's done on a grill, it's grilled, not barbecued. And if it's neither, it's not barbecued or grilled, it's just cooked or roasted or whatever.
>>21623429Yeah, and there's gonna be a small fraction of 1% of all barbecue places you buy food at that will sell their products under the name barbecue that was made in a pit in the ground. The rest of them will all be made atop grills (a grill?) in a metal enclosure (an oven?) with a fire nearby, and they'll call the entire construction - get this - a "barbecue pit", regardless that it isn't a pit, despite the fact that normal barbecue pits were originally actual pits so they're just reusing the same words for a hugely different thing - and get this - people will even sell those constructions under the same name, and not surprisingly, absolutely nobody bats an eye over the food terminology, nor the device terminology, nor even the cooking process terminology, and certainly no organization is going to come after you (as opposed to a lot of European stuff like "Champagne" or dozens of cheeses or wtv. It's all barbecue buddy
>>21623477It's still retarded and wrong, no matter how many people do it. Might as well boil a potato and call it a "baked potato"
Is there such thing as a healthy casserole? High in fiber and protein, low in carbs and fat. They all seem to have pasta and cheese and a rich sauce.
>>21621506>Jiffy cornbread mixJiffy isn't cornbread mix, it's a muffin mix. Corn muffins, but muffins nonetheless. That's why it's so unconscionably sweet like a cake - that's basically what it is.

>>21621690When I used to do it, I liked fresh beans more for their color and texture too. I also like using french's fried onions since they're smaller so they cover the top more. If you want a twist, I bet red bell peppers would be good with the beans, and give the dish some color. For some reason, I'd bet chinese spicy chili crisp would be good on top too. Or maybe swap the onions for potato and butter?
>>21626027Or cherry tomatoes or sundried tomatoes instead of the bell peppers.
>>21621385I make casseroles for my family. I freeze them in disposable pans so that I can just throw them in the oven. It's time saving and the kids like it. Some favorites of mine are shepherd's pie and enchiladas (freeze the enchilada sauce separately). You could use up chicken by making chicken pot pie in a casserole dish, or you could pre-bread a bunch of chicken, since that freezes well.
