I think a big reason, is the time they put in.

If the filling is a stew, chili or similar thing, they will have it on the stove for hours. This allows the flavors to develope and get richer.

Tell me about it. I've tried to recreate my favorite local breakfast burrito spot for over a year and I can't ever get it right.

The closest I got for the cheese is a mix of sharp cheddar and chihuahua. My hash browns NEVER taste the same but I'm buying the frozen patties from the store. I think I should fry them in lard instead of air frying them.
The sausage is a mystery too. I've tried every kind of breakfast sausage at the store and it never tastes right. It's definitely ground not in links but the sausage tubes I get never taste the same. Probably also fried in lard like >>21622676 says and with some spice blend I can't figure out.
I can live with sonora tortillas being slightly off, I don't have the skill or tools to make those right. But god damn it everything I put in tastes different, even the eggs. How the fuck do they get the eggs so fluffy with only two eggs.

What kind of burrito? Carnitas? A mexican told me the secret to good carnitas is to use a whole pig and fry everything in a big pot. You get a massive amount of conplexity from it that cannot be replicated with something like a whole shoulder.
