big part of it is the fresh made tortillas and properly cooked dry beans, huge upgrade in flavor and texture that's difficult to get right at home as a beginner. they're also likely using whole dried chilis as the base for their sauces and marinades instead of just powder. they're likely using spices you don't have access to like achiote. basically besides the fresh produce every ingredient is higher quality then what you'll have access to at the store.or something exotic you've never had.

I think a big reason, is the time they put in. If the filling is a stew, chili or similar thing, they will have it on the stove for hours. This allows the flavors to develope and get richer.
