On all hotdogs I sweat my onions a little, throw salt on and then top, unless its a bong-dog. For that you do a deep caramelize and pair it with an herbacious spiced sausage like Cumberland and a deeply crusted roll, brushed with colmans mustard, butter and a little 'chup. Fookin lush as were, how the Brits eat those rolls without shattering their teeth is beyond me thoughever.
