This is zapiekanka. It's a Polish street food consisting of a toasted baguette topped with sauteed shrooms and cheese. Ketchup is often used as a condiment on these (and if you don't know the glory of Polish ketchup, you should damn well learn).

It's not as well known as pierogi, stuffed cabbage, etc, and harder to find in the US outside Polish enclaves and big cities.

What are some other ethnic treats that fall into this category?

Well actually you're supposed to use a softer kind of milk bread, not a typical baguette.
And you don't have to saute the mushrooms, just grate them raw and mix with the cheese.
And top with lots of finely chopped chives (after baking).

In Bulgaria we call i a Princess, sometimes it's made with sausage meat, sometimes it's only cheese, or maybe ham and cheese or some type of salami.

It's a staple in our country, grandmas make it for their grandchildren.

I personally like the cheese only ones.

Of course there's Banitsa/Borek/Tiropita depending on were in Eastern/Southeast Europe you are. I've posted a few here when I make it.

It's a savory pie with phyllo dough and the filling (as per my grandma's recipe) is feta type milk cow cheese, eggs, yogurt.

I prefer to make it thinner because I like the crispy texture.
