They have broad appeal and basically everyone in the world understands a sandwich. Mexican "food" is just various forms of processed corn and rice cooked in and smeared with lard and some cut up vegetables on top, maybe some beans/cheese/meat if you're in the top 1% of wealth in Mexico (not even federal minimum wage in US)

The fierce competition between countless different cuisines also perhaps fuels the hunger and drive for improvement.
