You know how some of those bigger fries can sometimes be sweet? How do I recreate that every time? I have noticed it usually happens when I make fries at home and cut them by hand

If you try to cook fries fully from a raw potato with only one dunk, they'll be limp, dry, and burnt tasting. The McDonald's fry is yellow because they add some kind of liquid to them which prevents the color from getting brown when they cook. I don't remember what it is exactly but maybe it's like baking soda dissolved in water or something like that. It isn't a bad chemical though, it's just like the equivalent of putting lemon juice on apple slices to prevent them from turning brown.

The type of potato really matters, some potatoes brown easily and are not good for frying.Nothing to do with the oil.
