Ingredients for Borscht (8–10 servings):
- 2 beets
- 1/2 head of cabbage
- 3 carrots
- 3 potatoes
- 2 onions
- 4 cloves of garlic
- 300 ml of passata (tomato puree)
- salt, pepper and dill to taste
- lemon juice
- 2 teaspoons of sugar

For the broth:
- 3.5 liters of water
- 1 kg of beef (once it’s cooked you add that meat with rest of the ingredients)
- 2 onions
- 2 carrots
- 1/2 celery root
- 3 parsley roots
- 3 bay leaves
- salt and pepper to taste

One of my favorite local neighborhoods is all Ukrainian. I love to go to the farmer's market, deli, and bakery all next to each other in the same shopping center. I stock up on my favorite sourdough rye, kabonasy sticks, sour cherry and apricot jams, and chocolates, usually. I take home a portion of the 8 layer cake creations if I feel indulgent.

It all looks about the same but the difference is in the taste, like pho.

Use a beef stock with bone marrow, i use russet potatoes, a mirepoix with fennel root, ground dill seeds. White vinegar will turn the soup milky but i think it's much better that way.
I don't think tomato is meant to go in borsche at all, but I often see sauerkraut or picked used
