Smoked provolone, smoked mozzarella, smoked Gouda, I like it all. I have to be in the mood for it though. I do think they work better on sandwiches against strong-tasting cured meats.

i dont see the point of pouring artifical smoke onto everything but i guess if you dont live in areas with fireplaces and regular smoked meat the flavor.smell might be considered rare or exotic.

smoked fior di latte is provola. Mozzarella is made form buffalo's milk and fior di latte is cow's milk i prefer provola a lot compared to smoked mozzarella. I don't know how popular it is outside of italy though so i don't know if you'll find it
