Because they don't taste like fish, they taste (and smell) like spoiled fish. Westerners generally aren't poor enough to have to eat spoiled fish or seafood, so if we smell it, its usually because our fridge died, or some other mishap, or because the smell is coming from a garbage heap. If you show me a cheap snack food that tastes like fresh, well-prepared fish, I'll first in line to try it.

Prawn crackers are taking off in the US, they're selling them at Walmart and Costco now. I think they're alright, but cheese, spicy or BBQ flavors will always be more popular.

We don’t but I think that applies to most meats - beef or chicken flavor crackers and chips aren’t popular in the US, I think bacon is the only accepted one

This. Ever visit a fishing marina? Seagulls everywhere because there are fish guts rotting all around?
That's not a good aroma. That's a foul odor. Asians are culturally obsessed with seafood and they want it at all times in every meal and snack. It's like the USA and sugar.
I'll eat sesame seaweed type stuff, but even that's pushing it. I love sushi and fish tacos and fried fish and smoked clams and all of it, but not in crispy snack foods. Not in everything. I'd still barely drink a mountain dew over a crab juice at this point.
