>>21629922It's the same deal as jerk or any kind of bbq, but pre-caramelized in the stew before the chicken is coated in it. The shine will have a bit of heavily caramelized sugar to it, but most of that's just chicken fat, rendered out slowly, just hot enough to crisp the skin up after being submerged in the braising liquid.
The stew apect of it was too spicy for the missus, so I had to whip her up some quick kale-tater-onion-pepper-paprika-sourcream goo.The peppers here have been nuts lately.
