>>21629019No photo but my wife got a promotion so I surprised her with a fall favorite of hers tonight, Potato and Leek soup.Made some leek broth using leeks (obviously), garlic, a small amount of mushrooms and kombu, and a carrot for some sweetness.Cook some more leeks down in butter, then added the potatoes with a bunch of thyme, rosemary, and black pepper. Added the broth to simmer until the potatoes were soft.Blended everything in the pan, adding some EVOO to get it to mix. Stirred in some milk and lemon juice before serving for extra creaminess and acid. Final consistency was just south of a puree, so very thick for a soup but still liquid.Let that sit while I quickly cooked some beef tenderloin steaks, typical pan sear + oven. Included even more leaks in the basting butter.After resting I think sliced the rest of the leak, tossed in olive oil and salt, then topped the soup with them. Served that with the steak and lightly cooked leaks on a small plate. Was fun tasting the leek flavor in multiple ways and everything went great together. One of the more cohesive dishes I've thrown together on a whim.
