Paneer Admiration & Appreciation Thread.
Paneer, ghee, chutney, and naan the only good things to ever come out of india. Butter chicken/tikka masala dont count since they're essential british food.

>>21629516Also dhungar, though that's not an actual food but a cooking technique. My wife is Indian and she dhungars her curries. It's where you get a piece of natural hardwood coal (you can use untreated wood instead but it's tends to snap, crackle and pop cinders everywhere), heat it until glowing red and lightly ashy then put in on a metal dish floating on your freshly cooked curry. You drizzle a tablespoon of ghee or high smoke point oil over it then quickly lid the pot for a couple minutes; the smoke infuses the curry with a woodsy flavour. I do it for homemade pizzas to make them taste like they were wood fired rather than cooked in our electric-powered oven.Best to do it outside to avoid carbon monoxide poisoning but it's a very useful technique and not talked about enough when discussing Indian food
