Hello, /ck/. I have a problem and I desperately need your help.
I am currently living with my autistic father and he is a VERY picky eater.
Most of his diet consists of mashed potatoes and I've grown sick and tired of both cooking and eating it.
As such, I need your help figuring out what other dishes I can cook that fits his palate.

Things he refuses to eat:
>rice of any kind
>pasta of any kind
>small grains
>chicken
>soup (or anything too watery)
>mushrooms

Dishes he is willing to eat:
>mashed potatoes with kale
>sauerkraut with sausage
>ratatouille
>chili con carne
>white fish cooked with lemon and dill
>meatloaf
>burritos

If you have any recommendations, I would be very much obliged.

I unfortunately can't make the same dishes every week.
Unless it's some form of mashed potatoes, it takes at least a week before he's willing to eat the same dish again.

Aside from ingredients, frozen meals are a no-go for him, sadly. And I can't unfreeze anything secretly, as we live in a small house.

I actually had to move back home due to my landlord not willing to extend my two-year contract (because he wanted to raise the rent by like 300 euros and couldn't do that with me renting the place).
Didn't win any housing lotteries in half a year (every single-bedroom apartment I applied for had like 50+ other people applying), so my only options were to either live under a bridge or move back home.
Anyway, that's enough of my tragic backstory. Got any recipes in mind?

This. It's a good long list. Could be worse.

Weekly taco night/burrito night/enchilada night.
Personally, I would be a-okay with weekly meatloaf, especially leftover. I always do a 3lb package of ground sirloin (cook once, eat twice mentality) when mixing a batch of meatloaf. And they can also be cooked like burger sized and freeze like a champ. Burger loaves are great for flavoring up differently, glazing differently from asian to bbq to traditional.

Idahoan baby reds are $1 dollar a bag on sale, and a 4 cup pyrex w/2 cup water in the microwave 6mins is instant mashed for Dad no matter what rice or pasta you are enjoying.

Each week introduce 1 variation on his acceptable theme item, like mexican pork soup "chili" w/cilantro, Chili suffed baked potato w/cheese and sour cream on top, sausage and potato pierogies w/sour cream and caramelized onions,Sauerkraut and boneless pork ribs. Cold kale salad w/sweet poppyseed dressing, collard greens w/bacon, garlic sauteed spinach/baked spinach souffle, Sheet pan roasted veggie dinner with ratatouille ingredients, over mash. Baked potato soup-->potato corn chowder-->clam chowder. Potato lovers might like roast beef hash. White fish eaters who like lemon will like other lemony good things, what about turkey breast. What are his sandwiches?

Treat him respectful. He's had lifetime of bull over this crap. "Dad, I made something new, and here's a sample of it in this little bowl next to your plate, but I have your meatloaf leftovers heated up. Tell me if you like the new thing for next time." You'll know soon to keep trying. Act like you don't give a damn, ie never get your feelings offended or react. Shrug it off.

Good suggestions, thank you! Though again, soup is straight up a no-go. It's not even the taste; it's the very concept of it.
I also can't spend much time on cooking as I come home from work at 6 and also have to do other household tasks.

also pinto beans and fried taters will always be a favorite of the old folks, even if it's to remember the old days, I can't imagine what the euro equivalent is though

Is gravy too soup like? You could try corn if you want another carb, meatballs as a meatloaf variant. Also fish sticks and pizza seem pretty popular with autists
