What are some lesser-known foods that I should try in Japan? I already tasted basashi, puffer fish, ramen, sushi, curry, uni, wagyu, the usuals. On my upcoming trip I'm gonna try unagidon, tsukemen, and dunno what else.

High end sashimi. Fermented weird shit fish. 7/11 snack food. Go tour a whiskey distillery. Go to a mochi place. Look up what regional produce and what not and hit them up. Go fishing (inland/ocean) if you can.

Ochazuke, monjayaki, champon nabe, Hiroshima style okonomiyaki, momiji manju, give fugu a go if you can find a place that serves it, monjayaki, oden, basashi (horse sashimi), mapo tofu, Akashiyaki.
Just look up regional dishes, city dishes, and you'll find a bunch of stuff pop up. Even shit like ramen has its variants.
Also I feel like everyone should try motsunabe at least once. But its offal meat, so it tends to gross out people.

It barely has any taste, it's just beans. They always sell it with soy sauce and mustard because it's so bland.
Also even the japs eat it only for "health" and not because it's good.
