I usually make brining liquid by mixing equal part water and vinegar, for every cup of liquid I add a teaspoon of salt. Then warm it up until salt devolves, let it cool and pour it over veggies that are in a jar, press them untill they are covered with the liquid, seal and place them in fridge. Take this guide with a pinch of salt since I am also a beginner, but hey you aren't going to get better if you don't try.

Cucumber can also be considered fruit in botanical way, since it's a part of the plant the is cover in eatable matter that surrounds it's seed. Also you can pickle fruit like grapes, but they are fucking vile.

Here is the update on beets, since one anon wanted it. The were milder then roasted but had a stronger beet flavor then boiled beets, unfortunately the beet flavor overpower the carrots might add more carrots next time. On the aromatics side dill gave them a nice flavor, garlic was great, peppercorns didn't give much of kick, and they messed with the texture, the bay leaf did it's thing, next time might add some mustards seeds or a chili pepper. When eaten on their own it was ok, but when I ate them with boiled potatoes and fried pork is was a great meal.
