Beef is the most overrated meat in the world. People only rate it high because it's the most expensive meat you can realistically buy.
The taste just isn't that good and the biggest downside to steak is that it's so expensive that you want to savor it and it's frowned upon to use sauces and a lot of seasoning so you eat almost plain steak that doesn't taste good while if you bought some cheap chicken you would infuse it with flavor.

Almost nobody says that steak tastes bad on its own, though. Of all the ingredients, steak is the one that most people will be purists about putting as little as possible on because they want to taste as much of the steak as possible, going as far as to cook it to varying degrees of redness so that not even the cooking process gets in the way.
All of the meats and ingredients you could have chosen that line of thought for and you pick the one that it applies the least amount to.

$13.70 a pound of beef short ribs (no bones too, all meat) is pretty good especially nowadays. Short ribs are top three best cuts too. I'd buy it.

Beef has gotten too expensive. I can get a five pound organic air-chilled pasture raised chicken for $10 (ten dollars) and that will serve for several meals. I prefer lamb in a stew, lamb neck meat for stew is like $2 a pound. Or breasts of lamb, $3. Since they started vaxxing the beef cattle with MRNA I stopped eating beef for that reason too.

Another good reason to boycott beef is US beef is sold cheaper in China than it is in the US since the Chinese bought up half of the beef processors. I can just opt out of the whole thing and advocate against grain subsidies, if that grain is made to be cheap with my tax money I don't want the beef that eats it being exported AT ALL.

Wagyu refers to four breeds descended of cattle native to Japan and Western imports in the 1800s (there's two others known as Native Wagyu, but they're not bred, or have very little breeding, with Western cattle). Almost all Wagyu beef is cut from Japanese Black cattle, though, something like 98%.

Wagyu cattle can be found anywhere, but usually have certification. Australia is the second largest producer of Wagyu, for example, and there is a World Wagyu Council as well.
