You gotta flip 'em and cook each side a few minutes. Happens fast though so you need quick hands.

I prefer shallow poaching after browning but boiling it really hard while maintaining a constant water level. I don't know what you'd call that but it makes the sausages super juicy and you get a really nice tasty liquid to make gravy with.
