I use fresh onions and garlic every day. Powders aren't a replacement for the fresh aromatic vegetable, they serve a different use case. Garlic powder tastes very different to fresh garlic, I typically use it in dry rubs for meat or in addition to fresh garlic in sauces or soups to reinforce the deep pungency. Onion powder is a sweet & savory seasoning that is awesome in spice blends or to amp up savoriness in pizzas or meatballs.

Seasonings are used to cover up bad food or low quality food. That's why so many Americans dump seasoning blends or BBQ sauce on their meat until they cannot even taste it anymore. Good quality food doesn't need to be seasoned. The natural flavour is better than any rubbish powder.

These are all important, except the garam masala and the random bin of extracts and other baking shit up top. I pretty much everything except chervil. I even have good saffron.
