I cracked a little 16 ounce can of that stuff open about 2 weeks ago for some nachos. I've used it a couple times since. Today I opened up the snap on lid and it was somehow completely liquefied, as if someone had dumped out half the "cheese" and poured in water as a replacement. Totally baffling. It had utterly changed consistency just from sitting in the frige for a week or so.

Save like a cup or two in the fridge, use it to make some nachos with ground beef or wtv. Maybe save a cup or two in the freezer. For the rest of it, fill up a cassarole dish with enchiladas/entomatadas with flour tortillas, meat, chili sauce or tomato sauce, and cover with the cheese. Eat some, save the rest in the freezer. Gotta love the freezer.

It's a spicy cheese sauce meant for nachos. A big can like OP's is meant for commercial settings. A drive-in where I grew up was sponsored by the Rico's brand. Many other brands make their own though.
