Why does all fast food and almost all restaurant food taste fucking horrendous after going down to room temperature? It's almost impressive how disgusting mcdonald's becomes after just letting it sit for 10 minutes

Start the potato first. Don't get a huge potato, just a regular medium sized one. Stab the shit out of it, get the stabs deep into the potato. It depends on your microwave but cook it for 4-5 min, then stab it to see the doneness on the top side. Flip it over and cook it for 3-4 more min...I just stab it until a knife goes through.

A good fatty steak properly cooked only gets better once it's had time to come down to room temp after a meal. I hold off on finishing larger ribeyes at nice restaurants specifically so I can have the experience later where I can nibble and gnaw on the meat and bone.
Only low-quality food gets that shitty when let come to room temp. While good fried food will be worse if not eaten on the spot, it won't be as bad as you describe unless it's just not a quality dish.

Fries become meh when cold. Doesn't matter what kind, they all suck when cold. A quick trip through the air fryer fixes that though.

Fast food burgers suck when cold because they aren't actual burgers anymore - it's a think puck of pink slime with burger artificial flavoring. And flavors get dull when cold. So you have a cold, limp sandwich with wilted foot lettuce, some sour nasty pickles, some chemically stabilized cheese, with some mayo and ketchup to give this whole mess ANY semblance of flavor. A normal real burger will be fine cold, and still taste like burger. But not these abominations that approximate burgers.
