HOW TO COOK lentils and buckwheat. I want lentil or buckwheat dish that tastes good and is easy and fast to prepare.

Just boil them? I find 1/2tsp baking soda helps them cook more quickly (1hr to 45min for bigger beans, 30min to 20min for smaller beans like lentils), but it's by no means necessary. Don't add acid, it'll make them harder/crunchy in an unpleasant way.

If you want whole lentils, where the skin doesn't burst, so you can use them in salads or something where the texture is important, then try soaking the lentils for 4 hours in salt water, draining & rinsing before cooking.
The sodium ions replace some of the calcium in the skins which makes them more elastic and stretchy, so the lentil ends up inflating like a water balloon instead of bursting open into mush.

Isometimes i'll cook some bacon, and saute the veg in the grease then add the bacon back after I've added the stock

Sometimes I'll brown a chicken leg or thigh, or two, first, then add it back with the stock, then fish it out and strip all the meat and add it back to the pot and throw away the bone and skin

Lentils are easy because you can eyeball the liquid, they're not as finicky as beans

Dal tadka is delicious. Don't fall for any low-fat meme recipes, it will be much tastier if you add cream or coconut milk. Also don't feel like you need to keep it vegetarian. Chicken broth instead of vegetable broth makes it more satisfying.

Properly cooking buckwheat groats takes 1.5h.
You need to first toast the buckwheat with some lard (yes lard, it tastes best with lard, don't put in your gay oils or whatever) for 3 minutes or so, then add water in proportion 1:1.5 buckwheat to water IN TERMS OF VOLUME. The water needs to be fucking boiling of course because you just put hot fat in the groats. Boil on medium heat. Add some salt.
Then once the groats have absorbed ALL of the water, you must cover the pan and turn the heat to an absolute minimum (or even turn it off completely); ideally you put the pot in around 80C oven. Leave for an hour or so.

What to eat it with? You need plenty of sauce. Buckwheat pairs best with braised meat, ideally game or beef, braised wildboar with buckwheat groats is a real treat. Braising produces enough sauce for everyone to enjoy their groats, and the tastes nicely combine.
Mushroom sauce is always good with some buckwheat groats, so get your pork shoulder plus mushrooms in.

I don't eat lentils, so I don't know anything about them.

After soaking I let them sprout sometimes. But the more they sprout the more they taste like plants.
So I found that soaking overnight does a decent enough job.

I missed the vegan part, but I think you get the point. saute some onions, herbs, add chopped veggies, dry lentils, add vegetable stock, boil, cover, reduce to a simmer and let it go for 20-30 minutes. look up any lentil soup recipe, they're bound to follow this basic pattern.

For lentils I soaked them overnight and boiled them in broth and veggies for around a half a hour, it was ok not that great. For buckwheat you wash them, set water to boil, for every cup of buckwheat use two cups of water. When it boils add the buckwheat and simmer it for 15 minutes, you can cook it for more if you want. I like to eat them with chopped dates.
