there isn't much lactose in an average storebought cake. the frosting is probably made with shortening and not real cream and the cake likely is made with some combination of water and milk and not straight milk.

I must confess something, i have actually often thought of making more novel kinds of meats for the connoisseur market by feeding lifestock (chicken, pigs, cows, whatever) meals rich in a certain type of thing.
Maybe chicken raised on high protein diet? Maybe pigs raised on urea rich foods (for umami), or cows raised on high amounts of fatty vitamin e or perhaps vitamin a?
I'm really surprised foie gras isn't just seen as the starting point, the possibilities are endless! We could have so much more variety

You need to buy bulk feed, and use a commercial breed of chickens. Those red ones in my pic are called hyline red. Very good egg producers.
Ill get around 50% profit wholesale at 120 per case(15 dozen) of unsorted eggs. That goes up a lot at the farmers market where we sell sorted eggs for 10,11,12 dollars per dozen.

1 ton of feed is around 650 dollars and that lasts for about a weekish. 500 chickens in peak production get you around 2500 eggs per week. Call it 200 dozen. 150 dozen or 10 cases for 1200 dollars, and 50 dozen at farmers market for say 550 dollars, we sell at farmers market one day out of the week. 1750 grossed per week. We pay 400/month renting 10 acres, but no utilities. So feed + rent is like 700/week with profits of around 900-1000 depending.

This is during peak production when it's not too cold outside. Egg production drops to around 60% during the winter, so it reduces the yearly profit, but we remain in the green year round as long the chickens don't get sick.

500 chickens is not that many for commercial egg operations. We just recently finished building a coop that has capacity for 1000 birds, so hopefully next spring we get another 500 birds.

Also forgot to mention that we bought our chickens as pullets for like 15 dollars each. That gets paid off relatively quickly. You keep a batch of birds for around 18 months before getting new ones, which is right around when they get their first molt and they basically stop laying eggs.
