When trying to recreate the McFoF, How does one deal with the steamed bun question? There is really no commercially bun available (at least not in my vicinity) similar to the FoF bun and also it needs to be steamed just perfectly without becoming wet.

Wat do? What's the best advice here?

When I copy McDonald's whether it's the filet o fish or a mcdouble copycat I usually go for a potato bun, steams well and feels close to that fast food style
For alternatives, a hawaiian bun is super close in texture to what McDonalds uses but it's a little too sweet. Brioche steams well too but is also a bit sweet

That'd probably work well. I usually steam them on the burger itself but if I do it in the microwave I will wrap the bun in a damp paper towel and nuke it for like 10-12 seconds. Works perfect especially for hot dog buns if you like those steamed

Recommend to make it with salapao dough (or just "pao" if you are chinese),,, this is perfect for steaming because that's what it's designed for and does not get soggy but if you're going to use paper to stop it from sticking to the steamer then use non-stick paper because that normal stuff is a bitch to peel off the bottom of the bun.

it's documented anon. every sandwich at every fast food place goes through a long and onerous process of testing and refinement. the Mcdonald's test kitchen department was pretty much the first of its kind in the world (and btw no longer the best one). but back to the FoF, they test every detail of their products before rolling it out, and the FoF is no exception. the actual fish fillets they would accept or reject were tightly defined, the bun and preparation of the bun was tightly defined, the exact recipe and makeup of the sauce became policy. and yes, your half a slice of cheese was determined through iterations of trials in the test kitchen. people don't like fish overwhelmed with cheese, and people don't like a fast food
sandwich without cheese. the half slice was debated and tested and that decision to have a half a slice, no more no less, is completely evidence-based and a deliberate choice to make the most desirable fish sandwich they could make.

I, for one, agree the half slice is fucking perfect.
